I have never seen the word either. However, I would think of it as a visual word, 'capable of being put on a plate', meaning that the item came out well enough to look nice, rather than a mess (burnt, etc.).

Ok, as regards palatable, I've only run across it as meaning barely edible, something you'd only eat because you were hungry, or had no choice. "Eatable" in the sense that you could go on and eat more after trying that food.

"Mrs. Smith's stew was really bland, but I shook in enough salt and pepper to make it palatable."
