He pinned me to the ground.

Is this the right way to use 'pinned' ... following it up with 'to'? Or would it right to say pinned me against the ground, pinned me on the ground etc.?

Pinned to and pinned on are pretty generic but I think pinned against is typically used for vertical surfaces:

He pinned me against the wall.
