Hi,
I just wanted to ask a question.
Do I say "pieces of chocolate or chocolates" , "boxes of chocolate or chocolates"?
Is there a rule for this?
Also, is it acceptable to use pieces of ______ for count nouns like pancake e.g. 3 pieces of pancake/pancakes?
Typically, in a restaurant you see pieces of when you order food.
Thank you.

Normally "pieces of chocolate". This would normally mean pieces broken off, say, a bar. (The individual items in a box of chocolates are called "chocolates", not "pieces of chocolate".)
