Pickled?

Dear Everyone,

I looked up the meanings of "pickled" in the dictionary and I realized that there are cases where I can't decide which meaning is meant... For example here:

"A relish is a http://en.wikipedia.org/wiki/Cooking, http://en.wikipedia.org/wiki/Pickling, or chopped http://en.wikipedia.org/wiki/Vegetable or http://en.wikipedia.org/wiki/Fruit food item which is..."

Is this the case where the vegetables/fruits will be made more sour (and also preserved) by fermentation, or where we put them in a juice which is seasoned similarly to what spices we use for varieties of meat?

Can pickling include fermentation at all?

Thank you very much, Rover. So pickling cannot refer to a process where there isn't fermentation (for example, when we soak slices of meat in seasoned oil for a couple hours before baking them)... Am I right?

Soaking slices of meat in seasoned oil for a couple hours before baking is called 'marinating'.

To soak (meat, fish, or other food) in a marinade.
Example: The beef was marinated overnight in red wine vinegar and seasoned olive oil before it was baked for 20 minutes at 220°.
