Phrase "hold out" (from Ramsay's Kitchen Nightmares)

Hi guys,

could you pls help me the phrase "hold out"?

Context: Gordon Ramsay is very satisfied about how the restaurant is working after the restart ...

He said: "Surprisingly, we've got off a good start, very good start, but based on the performance of this kitchen in the last ten years, I'm not holding out, not yet."

Of course I checked the phrase dictionaries, but still, I can't fingure out what Gordon meant by that..Emotion: sad

Hi,

He probably means he's not going to keep on serving the dishes in the restaurant until

he's satisfied with the results. The food won't be supplied if Gordon doesn't find it ready to be served as he wishes.
