This one strikes me as unidiomatic, but the rest are fine.

I think you mean that the class (or whatever group) is made up of one third Asians and two thirds something else.
That is, it is not the one third, but the whole that is made up of something.

I think one thread from this forum went over this area of grammar and seemed to have been noted that when you have the "percent + of the noun" structure, the determining factor is whether or not the noun is plural or in singular, so it seems to me both sentences below should be in plural.

One third of the students are Asians.

One third of the students are mad
