Past simple Vs Past perfect

Hi,

Firstly, I'd like to express my gratitude for the people here who help us non-native English speakers to improve our English. (Thank you Teechr for answering my first question here).


We had already started eating dinner before Karen arrived

Why does the verb start appear here in Past Perfect form and not in Past Simple form?

When Karen arrived, we had dinner.

I can see why in the second sentence, both verbs appear in their Past Simple form.
