Past perfect+since+ past simple or past perfect?

It's been a while since I saw for the first time this construction. I've read in a book this sentence "It had been 30 days since I had seen my parents" and I don't understand why did she use past perfect in the second part instead of past simple. So my question is if with since I have to use past simple or past perfect. And how to understand when to use both of them.

No. It's a common pattern, and it's correct to use the past perfect twice like that, but you can substitute the simple past after since.
