Past perfect simple

Hello.

I've read on my school's english book that I can **only ** use past perfect simple along with past perfect in one sentence.

For example : "she told him everything he had told her"

But I've also come across the next sentence:

I wish I had never known. As you can see I don't have past perfect in this sentence.

So, id like to know what are the particular rules that apply to this tense?

Thank you
