Could someone tell me which variant is correct and why? My grandfather died 30 years ago. I never met/had never met him. Is it important to emphasize that he died 30 years ago and therefore a hadn't seen him before that event. Or just met because he died and i didn't see him at all therefore it's not important to show perfect aspect?

I had never met him... before what? The past perfect requires a point in time in the past, either implicit or explicit. From your example, it's impossible to know what exactly you want to say, and therefore I can't imagine any implicit points of reference in the past. If you mean to say that he died 30 years ago, and you were born after his death, then you "never met" him. You never met him.
