We just had the turkey that X saved/had saved for us.

Thank you but could you please explain.
I believe simple past is for something that happened in the past and past perfect for referring to something that happened before a point in the past. So we had the turkey in the past but X saving the turkey happened before it. So why not past perfect?

When the sequence of events is clear, the past perfect is often not obligatory.
