which one is correct? come or came? give explanation if possible.

Did you notice anyone come in? Correct; the infinitive form is used after verbs of perception in the same way as after causative verbs. eg. I saw Mary come in. I heard Mike play the sonata. There are other patterns where the bare infinitive is used.

Note that it is possible to say, "Did you notice someone came in?", but this is a completely different construction. This becomes clearer if we add an optional 'that' - "Did you notice that someone came in?"

I would not omit the "that" in this construction. To my ear, it is one of the situations where it's not optional.
