Is there any difference between over holidays and during holidays?
Bob was bored during/over his holidays.
If there is any difference, does it concern the duration of the holidays? I've been thinking that "during" may mean "some time" and "over" may mean "the whole time", but I'm sure at all.

As I think I have already said, 'over' (to me) indicates the whole period, while 'during' may indicate the whole period or may indicate just a portion of the period.
