Others Or The Others

Hello everyone. I have a couple of questions.

Suppose someone saw several people having a discussion in French and told somebody else about his impression on the moderator's French later.

Her French was easier to understand than the others', but still I couldn't understand all of what she said.

Q1 Is the definite article in "the others'" necessary?
Q2 Can we omit the "of" in "all of what she said"?
Q3 Are there any mistakes I made in the sentence?
