Oreintation report

Hi,
i'm currently writing a report on an oriention i had on a new job. i have already started compiling the write-up but i'm not quite sure of the kind of grammar to use. I didn't do much practical stuff cos the time was short. What i had was people talking to me about WHAT THEY DO, WHAT GOES ON AROUND, CHALLENGES THEY FACE, etc. Unfortunately, i was asked to make a report on MY ACTIVITIES DURING THE ORIENTATION (which was mostly listening and observing). Please advise on how to go about it.
Should i say " Fred said ....", "Jack showed me....", etc
OR "i learnt....", "i did..."

You can use both styles: for eample: We went to the canteen and Jack demonstrated the food preparation area. I learned it was designed for our safety, and maintained hygenically. I learned the name of the supervisor and will send any feedback to him in the future.....
