I suggest that in future you refer to a dictionary instead of asking why.

I agree that the opposite of 'sweet' can be either 'sour' or 'bitter' although The New Oxford Dictionary of English defines 'bitter' as 'having a sharp, pungent taste or smell; not sweet'.
