But adjective is for example "interesting bars"(quality) or "frying pan" (purpose).
And here "opening" stands for "initial" or "introductory" (opening speech, opening scene of a movie)
Does it make a change? May it be a noun or even some form of a verb?

Opening - is indeed an adjective. The opening bar is the first bar of a piece of music.

Very strictly it's the present participle (the -ing form) of the verb 'to open', but adjective is a good name for it as well. The opening bars of a song are the bars that open (begin) the song. We say that 'opening' modifies 'bars'.
