I opened my eyes to notice a man in white hat. #1

I opened my eyes to a man in white hat. #2

Are both okay? Can one avoid 'notice' if we use #2.

Nope. Noticing is an activity. You need something more passive.

This is possible in some sort of literary context, but it is far too odd for conversation.
