Could you look over these open cloze sentences:
1. DESPITE the mere suggestion that something might be wrong, he became most unpleasant.
2. Everything must be AS it claims to be.
3. If you are brought a vintage NOT from that stated on the wine list, send it back.
4. The empire the dog fence preserves is ONE of the wool-growers.
5. Sceptics found similar interconnections AMONG telephone boxes across the UK. (or BETWEEN?)

Besides, please correct me if I'm wrong - to my knowledge, when it's about 2 items, we say "between"; about many items, we say "among".

Yes, 'one' and 'that' are pronouns there.

These are correct:

The empire the dog fence preserves is that of the wool-growers. (the growers have only one empire)
The empire the dog fence preserves is one of the wool-growers'. (the growers have several empires) Note the apostrophe.
