One or one person?

Hi. There's an old Korean saying that says something like the meal is so good that you don't know when one dies while the two eat. Can I write this for the underlined part as a let alone statement? Does it sound natural and correct? Do we need the ones in parentheses? I hope my questions are clear. Anyway, thank you in advance for your help.
