One

Lately I have been having a lot of problems understanding the use of pronoun "one".
"Those are lovely doormats. I think I'll buy one."
In the above sentence, is "one" a pronoun representing "doormat" or is it a numerical expression ?
If it is a pronoun, then why can't we say "I think I'll buy a one", when we can say "I think I'll buy a doormat." The "one" is only replacing "doormat".
