Tap him in/ on the neck.

Which preposition is correct?

P.S. I'm confused as it's always 'stab/ prod/ jab/ poke in the ribs/ neck/ shoulder etc....

And also, could you please tell me if it's correct to say 'poke the fire to stoke it up'?
