Hello. I'd appreciate if if you could help.

I saw this sentence in a dictionary

The evaluators' initial impression was ( A ) of a school with a fairly traditional outlook but one in which facilities were enviable.

Q1. I assume a word is omitted in ( A ) but I have no idea. What would that be?

Q2. What does the underlined 'one' represent for?

No. Nothing is omitted. It's OK as is. The meaning of "of a school with ..." is "the impression of a school with ...".

Likewise:

My first thought was of a hamburger.
