Both attempts are very awkward. Trying to hyphenate multiple attributive adjectives is not something we do often. It was an Olympic record-breaking performance.

It's record-breaking that you need here. It is an active description of a kind of performance which is breaking all the records.

Broken is passive, not active. Think of it like this - A broken performance is like a broken leg - it does not go anywhere very fast.
