There are three meanings for this expression as i've heard:
1. Quite fresh.
2.Exceeding the minimum level of satisfaction.
3.Freed from an allegation.
Are they correct? Are there any other meanings for this expression?

Meanings 1 and 2 do not seem correct to me.

In the case of "no longer in difficulty or trouble", is it interchangeable with the expression "out of the wood"?

Not really.

"off the hook" usually suggests you were being held responsible in some way

"out of the woods" suggests you were in a confusing, difficult sotuation
