I’ve dated white men, Hispanic men, African American men.

How would you phrase the following?

I’ve dated people of/with different culture.

I’ve dated people of different race.
I’ve dated people of different color.

Try: "I've dated people/men from a diverse range of backgrounds".

I’ve dated people of different cultures. ("White" is not a culture, believe me.)

I’ve dated people of different races. ("Hispanic" is not a race, whatever a race is.)

I’ve dated people of different colors. ("Colors" sounds weird there, oddly. It sounds like they got into the washable markers again. And anyway, "Hispanic" is not a color, and we say "black" for "African-American" if we want color.)

The somewhat ugly quasi-euphemistic neologism "ethnicities" is also available. It covers all three of your socio-sexual experiments: "I’ve dated people of different ethnicities."
