"OF" or NO "OF"

How would you say this please?

How come in the question OF is needed and in the answer there is no OF?

1 My parents are (of) two different religions/have 2 different religions. She is jewish.

Is this sentences grammatical? How would you say it?

1 She's in the middle of the bus knowing that she's going to get off in one station.

It would be pretty awkward to try to phrase the answer using "Judaism." I would just say "My mother is Jewish and my Dad is Catholic."
