"She has two jobs: a teacher and a baby-sitter."

"His occupation was teaching."

"His occupation was teacher."

"His occupation was a teacher."

I would not use these:

"She has two jobs: a teacher and a baby-sitter."

"His occupation was teacher."

"His occupation was a teacher."

I forgot to add these to the original post:

"His occupation was listed as teaching."

"His occpuation was listed as teacher."

"His occpuation was listed as a teacher."

According to CalifJim, only the first one is correct?

I find the first and the second acceptable. I would not use the last one.
