Not that~

1. The flavor is medieval if there were guns in medieval period not that these 'heroes' use them preferring and enjoying to use their fists most of the time to solve problems.

2. The flavor is medieval if there were guns in medieval period, even though these 'heroes' don't use them preferring and enjoying to use their fists most of the time to solve problems.

Can I rephrase #1 into #2?
If so, can I do that without a comma/ dash before not that?

The flavor is medieval...if there were guns in the medieval period—not that these 'heroes' use them, preferring to use their fists most of the time to solve problems.

I think not. The utterance, as you see, requires some unorthodox punctuation in order for it to make good sense.
