Not such a good school day

Hello.

If the question is: 'How was your school day?' and the answer cannot be enthusiastic because something unpleasant happened (even if it was nothing terrible), what could be the answer?

Perhaps: (1) 'So and so.' (by the way: does anybody say that in English?)

Or: (2) 'Not so / too good.'

Thank you.

I don't hear anyone answer with 'so an so'. 'Not so / too good' are common answers.

So so. (Not "so and so")

Not enthusiastic:

So so.
Not bad.
Nothing to write home about.
Could have been better, could have been worse.

These are all good. There are also many other possibilities. Some, among others, could be great, terrible, awful or boring.

This is not very natural. People would normally say: 'How was school today?' or 'How was school?'. They might also say: 'How was your day?' when it is clear that they are referring to the other person going to school.
