None of the above. Say eg

I know something about the i-phone, but not everything.

I don't know everything about the i-phone.

Clive has given you a good reply. I'd just like to add that not is sometimes placed before some indefinite pronouns. That doesn't mean it can be placed anywhere. Examples:

Not everything interests him.

Not everybody likes him.

Not all questions are easy.

In your sentence nothing follows everything, which makes the sentence even more natural.

PS. On second thought, I think the natives would call all in the last sentence an adjective, not a pronoun as it doesn't replace a noun.

Thank you I understood. But, I meant it like

When I pray, I sometimes say I don't know everyting, so please Lord help me.

I don't know everything means I know some of knowledegs like mathmatics or English but there are a lot of things I need to know but mostly I don't know.

So... Did I use the correct one? I know something but not everything.
