Not all fat is/ fats are bad

Hi, I have a question.

The plural of fat is fats.

Why is this correct then?

Not all fat is bad.

Shouldn't it be:

Not all fats are bad.

'Fat' can be use in both a countable and a noncountable way.

Not all fat is bad. / Not all fats are bad.

In effect these both say the same thing. I suppose the writer was referring to different kinds of fat. I would have used the second of these if I had written it, but the first is also possible.
