When writting the shortened version of good night, should I use an apostrophe: 'Night. ?
Or would you just write: Night. ?
I like the apostrophe. I think "night" might puzzle the reader without it. You use one in "g'night", so this is like that with no "g".

'night, Mother is a play by American playwright Marsha Norman. The play won the 1983 Pulitzer Prize for Drama.
(It is variously written as 'night, Mother and 'Night, Mother, but always with the apostrophe.)
So you have a respectable precedent if you want to follow it.
