Need some help here.

Greetings, dear teachers and everybody!

I'd like you to check my grammar in the following sentences:

These were/have been such great holidays! (I mean that I'm going to go home because my holidays are now over. I'm not quite sure if I can use have been but I'd really like to because I want to emphasise my feelings about that holiday).

What else are they left (with) to talk about? (Am I to use with to say what I want to say?)
