Either one is acceptable, though I believe the preferred form is "Jones' ."

The usual form I hear is eg This is Mr. Jones's office.



Where it gets trickier if there are multiple people called Jones.

eg These are the Joneses' children. (This is OK in speech, but I'd avoid writing it if possible.)
