Nationality versus People

I have questions about nationality and the people of countries.

for instance

Italy is a country

Italian is a language and also the adjective for italy

But for the people do we have to use Italians or the Italians.

Ex. Italians eat a lot of pasta OR The Italians eat a lot of pasta

British like to play soccer Or the British like to . . .

Thanks in advance

You can usually use either; both are grammatically correct. I like the definite article.
