Naming "categories"

Hello. I want to write a report on these pie charts. At some point, I want to use below form of language, so let me know which one is correct:

Over the period, the category of German saw no change it its percentages.
Over the period, the category of speaking in German saw no change in its percentages.
Over the period, the category of students speaking in German saw no change in its percentages.

I know there are better ways to describe this, but for some reasons I want to use the word "category". If it is needed, please reword the sentences using the word "category".

Any of those could be correct.
