Yes, it was a bit strange.
Part of your sentence could be read as "because Japanese people believe that potatoes are vegetables, we don't eat them.
eg. The reason for not eating potatoes is because they are vegetables. You do eat rice and bread because they are not

It still does not have a good logical flow.

I think most Japanese people believe that the potatoes are vegetables, even though they are a starchy food. We prefer these starchy foods - rice, bread, and pasta - over potatoes.
