Much knowing

Hello....

I feel that if the underlined part is changed to "much knowing", it will be ungrammatical, or at least unnatural.
Is this correct understanding?

Many people are prejudiced against certain religions, races, nationalities, or other groups without really knowing much about them.

That inversion of gerund and adverb doesn't work in this sentence, but the grammatical pattern is not entirely unknown. I found this online:

The screenplay doesn't have the same cruel toughness, and we're left smiling at these Irish folk without much caring what happens to them.

I fiugue this one doesn't feel that awkward to natives' ears....
Before going into detailed grammatical explanations, I also feel this one is not that awkward....
