Are these responses correct?

Possible questions:
How many responses (what is the respnose rate) on your questionnaire?

Which is the correct response? Is the word 'response' variable?

1. Not much response was received.
2. Not a lot of responses were received.

2. Not a lot of responses were received.
If by "variable" you mean "can it be both countable and uncountable?" I think the answer is "yes," and to that extent both 1. & 2. are acceptable.
