It's not quite right. How about this:
There are only two things that quench my thirst for insanity: getting lost in thoughts of mountains, and being among them.

(I'm not clear what you mean by thirst of insanity. Could you explain what you have in mind?)

"There are only two things that keep me sane..." is the most obvious way of saying it.

OK. Quench my thirst of/for insanity isn't going to work. You could say something like:
There are only two things that keep me sane:
There are only two things that keep insanity away:
There are only two things that keep my insanity under control:
There are only two thing
