When I grew up, German vacationers were the subject of one particular stereotype (which was) dearly held by many English girls and boys.

Q) If "which was" is thought to be omitted, what does "which" refer to exactly? Is it "one particular stereotype" only? Or is it "the subject of one particular stereotype?"

Q2) What can replace "held" if there is one?
