Talking about surfing. Can you say: It'd really help if you know how to swim.

I think I can imagine a situation where it could work. Yes. Probably with "impersonal you".

But the more usual form in the case where you're talking directly to someone who expresses an interest in learning to surf would be It'd really help if you knew how to swim.
