Mine/His/Hers/Theirs : Singular or Plural

A. I have two balloons and he has only one. Mine is both red and his is blue.
B. I have two balloons and he has only one. Mine are both red and his is blue.

C. Sarah has a dog, and Ben & Jerry also have a dog. Hers is a german shepherd and theirs is a shitzu.
D. Sarah has a dog, and Ben & Jerry also have a dog. Hers is a german shepherd and theirs are a shitzu.

1. Which sentence in each pair above is correct? I'm confused because what I know the form "mine/his/hers" are singular and "theirs" is plural. However, they don't sound right to my ear with the singular and plural verbs, respectively.

2. By the way, is the article "a" before "german" and "shitzu" important to make the sentence grammatical? Can I omit "a" with no change in meaning? What is the difference between with and without an article in the sentence?
3. Also, I was wondering if I should have capitalized the beginning letters of german shepherd and shitzu, ie. German Shepherd and Shitzu. Do I need to capitalize them in the sentences above?

Please advise. I would be very grateful.

I see the basis for the correct verb is the balloons and dog in my examples not the pronoun.
Also, the article is necessary and if it's formal writing, the dogs' breed should be capitalized.
