Mac is pronounced Mick. D is the first letter of Donald, so D's represents Donald's. Mickey comes from Mick. (Mickey Mouse is another use of "Mickey".)

It's McDonald's.

It's said "Mick Donalds."

Mickey is a nickname for Mick (which is actually a nickname for Michael).

Donalds is shortened to D's - and gets it's apostrophe back in writing.

In California, at least, it sounds more like "make donalds" to me.
