Meaning of a phrase

What does "one square red hand" mean in this extract:
...At the moment of his death, he sat down to his breakfast and lifted his knife in one square red hand halfway to his mouth, and then with a look of complete astonishment, he lowered it until the hand rested on the edge of the plate and tilted it up off the table...

Peymands in one square red hand I really don't have any idea what this means. If it is an idiom, then I've never heard it. Maybe his hand was actually red or had something red on it??

And about "square" ? Does his hand have a square shape, or sth else?

Without further context, I'm guessing that this means a big, block-type, flushed hand. Some large-framed, fair-skinned men have this type of hand: large, brawny, flushed red, and almost square-shaped when the hand is closed, like when he's holding a knife or fork.
