See the following sentences; does meaning difference exist between two sentences?

If I were to a bit taller, I would apply for the beauty contest next month.

The "to" after "were" is uncalled for. The sentence is fine without it.

See the below sentences, I extracted the sentences from a grammar book.

If he were to be my boss, it would be horrible.
If you were to have no hand, what would you do?

Why are the above sentences possible and isn't my example?
