would you write " Now it is Mother Nature and I enjoying each others company" or "Now it is Mother Nature and me enjoying each others company"

Both sound fine to me. I don’t think the first sounds overly formal or old-fashioned, as opposed to a sentence like It is he.

Incidentally, you need an apostrophe in each others.
