Can you please tell me the difference?

Our Math(s) teacher was absent yesterday.
Our math(s) teacher was absent yesterday.

My dictionaries show me both.

Thanks, CJ -- but I was asking about capitalization; some dictionaries capitalize the word, some don't. What is the rule?

A geography/history lesson or Geography/History lesson

Science/Math teacher or science/math teacher

Mr. Tomsome dictionaries capitalize the word, some don't.
I did not realize that. The way I've seen it all my life is uncapitalized except for the names of languages.

science teacher, math lesson, French class, chemistry class, English teacher, German lesson, physics instructor, ...

This is the sentence I found in Oxford Advanced Learner's Dictionary. Would you capitalize science and maths in this sentence?

The core subjects are Science, Maths and English.

No, I would not. Definitely not. (It could be an American practice not to capitalize those.)

In the UK it was common practice to capitalize the names of school subjects, though style guides didn't recommend it. As a result I have a tendency to use capital letters where others might not. I'd write The core subjects are science, maths and English though.
