What is the meaning of" you don't know that" in the following text?

"I guess the Stones are at it( murdering) again."

"You don't know that."

"No one will ever know. I'm just happy they're our clients."

Furthermore is the phrase "they're" in the last sentence of the text referring to the Stones?
